I found out about this wine through discussion on Twitter about asparagus and English Wine pairing. The conversation led me to discover that that one of the country’s leading asparagus producers, the Chinn Family of Wye Valley Produce, also make an award winning English Sparkling Wine.

Made from a blend of 50% Chardonnay, 30% Pinot Noir and 20% Pinot Meunier, the Castle Brook Classic Cuvée has spent an impressive 4 and a half on its lees. Winemaking duties are handled by Simon Roberts of Ridgeview.

This a decadent looking wine with gorgeous golden tones and fine, persistent bubbles. Lovely aromas of baked apple and warm brioche with delicate spiced notes.

The palate on this wine is rounded, unctuous and put simply: moreish! Ripe pear and apple with a twist of citrus and stone fruit flavours. Wonderful creamy texture, lots of brioche and soft baked pastry flavours.

A seriously tasty wine with a wonderful softness that envelopes the whole experience.
